I'm thinking pretty seriously about doing this:

    SALVI (North American Institute for Living Latin Studies)
    presents its sixth annual "Rusticatio Californiana"
    a practical, fun, intensive workshop providing a
    total-immersion Latin environment for high-energy exercises
    in conversation, supplemented with readings from all
    centuries of Latin writing grouped around the general theme
    of the Latin literature of food and wine.

    Dates:  August 4-11 , 2005.  Arrival Noon Thursday, August 4.
    Departure 11 A.M., Thursday, August 11. 

The best Latin speakers I know have pretty much all done this program
(or are running it!).

The entry requirements are a lot lighter than you might be thinking.
The organizers call for "a minimum of one year of traditional
college-level Latin.  This program is well suited to people who have
never tried speaking Latin before [...]".  Surely there are some
seth-trips subscribers who fall into that category.
